
INGREDIENTS
- 3 eggs
- 1 large onion, finely chopped
- 5 garlic cloves, crushed
- 1 red or green pepper, finely chopped
- 2 medium tomatoes, finely chopped (or tomato purée)
- Coriander or parsley, finely chopped
- Dry spices of choice (like red paprika powder, crushed black peppercorns and ground cumin)
- Salt to taste
- Olive oil
METHOD
- Heat the oil in a flat frying pan.
- Add the chopped onion and garlic and sauté well till they turn translucent.
- Add the red or green pepper and give it a mix.
- Now add the chopped tomatoes or tomato purée.
- Add the salt, herbs and other spices of choice and mix well. Let it simmer until the tomatoes are cooked well.
- Now add some water and let everything cook together for 2 minutes.
- Once the gravy has come to a boil, make 3 small depressions in it with a spoon and crack an egg in each.
- Cover and let the eggs cook for a few minutes until the egg whites are set.
- Serve with pita bread or any other bread of choice.
