
INGREDIENTS
- 8 slices white bread
- 3 tablespoons butter, at room temperature
- 1 tablespoon marmalade or jam (optional)
- Raisins and berries of choice (for the filling and topping)
- 3 tablespoons brown sugar
- 2 eggs
- 2 cups warm milk
- 1 teaspoon vanilla essence
- Nutmeg or cinnamon powder
METHOD
- Apply butter on each slice of bread and set aside. You can also add marmalade or jam, if using.
- Cut the slices into triangles and arrange half of them in a greased baking pan with the buttered side facing up.
- Spread some raisins and berries on top followed by a sprinkle of brown sugar.
- Now place the rest of the bread triangles over it, buttered side up, and repeat step 3.
- In a bowl, beat the eggs well, add warm milk and the rest of the sugar and whisk well. Then add the vanilla essence and mix.
- Now, pour the milk mixture onto the bread.
- Lightly press the bread so it soaks completely in the mixture and let it rest for 20 to 30 minutes.
- Sprinkle some nutmeg or cinnamon powder on top.
- Preheat the oven to 180˚C.
- Place the baking pan in the pre-heated oven and let it bake for 30 to 40 minutes until the top of the pudding appears crispy and golden.
- Let it cool for a few minutes and serve.
