Add the salt, herbs and other spices of choice and mix well. Let it simmer until the tomatoes are cooked well.Â
Now add some water and let everything cook together for 2 minutes.Â
Once the gravy has come to a boil, make 3 small depressions in it with a spoon and crack an egg in each.Â
Cover and let the eggs cook for a few minutes until the egg whites are set.Â
Serve with pita bread or any other bread of choice.Â
