Researchers at the University of Bristol, UK, recently discovered the source of blueberries’ colour. Based on their study, it was found that the berries get their colour from small structures present in the wax coating that layers them. These tiny structures are responsible for scattering ultraviolet (UV) light and blue light, resulting in the blue appearance. Thus, these fruits appear blue though they have dark red-coloured pigments in their skin. This also gives fruits like sloes and damsons their colour.
