To the rice flour, add the turmeric powder, asafoetida, green chillies, ginger-garlic paste, crushed cumin seeds, oil, salt, coriander leaves and curd.Â
Mix well. Now add water to prepare a smooth batter. Let it rest for 30 minutes.Â
Cut the banana leaf into small square pieces and apply oil to 1 side of each piece.Â
Heat a tawa on a low flame and place a piece of the banana leaf with the oiled side facing upwards.Â
Spread the batter on the leaf and place another leaf over it. Let the panki cook well.Â
Cook it on both sides and your panki is ready. Serve it with green chutney.Â
