Palada Payasam (Pradhanam)

Palada payasam is a special dessert made on festive occasions in Kerala and is loved by all.

INGREDIENTS

  • 1 cup rice ada (palada)
  • 1 litre full cream milk
  • ¾ cup sugar
  • 1 teaspoon cardamom powder
  • Slightly roasted cashews and raisins (optional)

METHOD 

  • Boil 2 to 3 cups of water. Once it boils, add the rice ada and let it cook for a couple of minutes (alternatively, read the instructions on the packet for cooking the ada).
  • Strain the water and keep the boiled ada aside.
  • In a thick-bottomed pan, add the milk. Bring it to a boil. Keep stirring the milk.
  • Once it boils down to ¾th of its quantity, add the boiled and strained palada.
  • Add the sugar and let everything boil together till it becomes thick.
  • Add the cardamom powder and the cashews and raisins. Serve hot.
