Palada payasam is a special dessert made on festive occasions in Kerala and is loved by all.
INGREDIENTS
1 cup rice ada (palada)
1 litre full cream milk
¾ cup sugar
1 teaspoon cardamom powder
Slightly roasted cashews and raisins (optional)
METHOD
Boil 2 to 3 cups of water. Once it boils, add the rice ada and let it cook for a couple of minutes (alternatively, read the instructions on the packet for cooking the ada).
Strain the water and keep the boiled ada aside.
In a thick-bottomed pan, add the milk. Bring it to a boil. Keep stirring the milk.
Once it boils down to ¾th of its quantity, add the boiled and strained palada.
Add the sugar and let everything boil together till it becomes thick.
Add the cardamom powder and the cashews and raisins. Serve hot.
