Oat Cookies

Nothing can be better than baking with your child! Try making these easy healthy oat cookies.

INGREDIENTS

  • 1 cup whole wheat flour
  • 1 cup rolled oats
  • Âľ teaspoon baking powder
  • ½ teaspoon vanilla essence
  • ÂĽ teaspoon salt
  • ½ cup unsalted butter, at room temperature
  • Âľ cup jaggery powder (measured after sifting the jaggery powder)
  • 2 to 3 tablespoons milk
  • ÂĽ cup chopped almonds

METHOD

  • Pre-heat the oven to 175°C. Line a large baking sheet with parchment paper and set it aside.
  • In a bowl, add the flour, rolled oats, baking powder and salt. Mix until everything is well combined. Set this aside.
  • In another bowl, add the butter, vanilla essence and powdered sifted jaggery.
  • Using the paddle attachment of your stand mixer or hand mixer, beat the butter and jaggery until well combined and creamy.
  • Add the milk and mix well until combined. Add in the flour-oats mixture. Mix until it all combines together. Then add the almonds and mix well.
  • Take 40 to 45gms of the dough and roll it to form a round shape. Press it between your palms to flatten it to form a 2.5-inch diameter circle. Make similar cookies from all the dough. You should get 12 cookies.
  • Arrange all the cookies on the prepared baking sheet. Bake at 175°C for 20 to 22 minutes.
  • Remove the cookies from the baking sheet and place them on a wire rack to cool completely. Once cooled, store them in a clean airtight container. Enjoy with milk, coffee or tea.
