Try this quick and easy Indonesian twist on fried rice.
INGREDIENTS
2 cups cooked rice
1 medium onion or spring onion, finely chopped
3 garlic cloves, crushed or finely chopped
1 fresh red chilli
5 ½-inch tofu or chicken pieces
3 tablespoons soya sauce
1 tablespoon brown sugar
1 teaspoon shrimp paste (optional)
Salt and black pepper to taste
1 tablespoon oil
METHOD
In a small pan, add the soya sauce and brown sugar, stir them together and turn the heat off when the sauce thickens.
In a larger pan, heat the oil, add the onions and garlic and let them cook for a minute.
Add the red chillies followed by the tofu or chicken.
Add the prepared sweet soya sauce, some crushed black pepper and shrimp paste (optional) and stir well.
Now add the rice and mix well. Place a lid and let it simmer for 2 to 3 minutes.
Serve with a boiled or fried egg and some steamed broccoli.
Note: You can add more vegetables of your choice like carrots, capsicum and others to this dish.
