This yummy raita from Uttarakhand features grated cucumbers and mustard seeds.
INGREDIENTS
1 cucumber
1 cup curd
1 teaspoon mustard seeds
1 teaspoon cumin seeds
Coriander leaves, chopped
1 green chilli
1 garlic clove (optional)
½ teaspoon turmeric powder
Salt to taste
METHOD
Roast the mustard and cumin seeds.
In a mortar and pestle, grind the roasted seeds coarsely with some coriander leaves and the green chilli. You can add a garlic clove too.
Grate the cucumber and set it aside.
In a bowl, take the curd and beat it well.
Now add the ground spices, turmeric powder and salt.
Squeeze the excess water from the cucumber and add it to the curd.
Mix everything well.
Garnish with some coriander leaves and serve.
