Kumaoni Raita

This yummy raita from Uttarakhand features grated cucumbers and mustard seeds.

INGREDIENTS

  • 1 cucumber 
  • 1 cup curd 
  • 1 teaspoon mustard seeds 
  • 1 teaspoon cumin seeds 
  • Coriander leaves, chopped 
  • 1 green chilli 
  • 1 garlic clove (optional) 
  • ½ teaspoon turmeric powder 
  • Salt to taste 

METHOD 

  • Roast the mustard and cumin seeds. 
  • In a mortar and pestle, grind the roasted seeds coarsely with some coriander leaves and the green chilli. You can add a garlic clove too. 
  • Grate the cucumber and set it aside. 
  • In a bowl, take the curd and beat it well. 
  • Now add the ground spices, turmeric powder and salt. 
  • Squeeze the excess water from the cucumber and add it to the curd. 
  • Mix everything well. 
  • Garnish with some coriander leaves and serve.
