Egg Shakshuka is a traditional Turkish breakfast of poached eggs in simmering tomato sauce.
INGREDIENTS
3 eggs
1 large onion, finely chopped
5 garlic cloves, crushed
1 red or green pepper, finely chopped
2 medium tomatoes, finely chopped(or tomato purée)
Coriander or parsley, finely chopped
Dry spices of choice (like red paprika powder, crushed black peppercorns and ground cumin)
Salt to taste
Olive oil
METHOD
Heat the oil in a flat frying pan.
Add the chopped onion and garlic and sauté well till they turn translucent.
Add the red or green pepper and give it a mix.
Now add the chopped tomatoes or tomato purée.
Add the salt, herbs and other spices of choice and mix well. Let it simmer until the tomatoes are cooked well.
Now add some water and let everything cook together for 2 minutes.
Once the gravy has come to a boil, make 3 small depressions in it with a spoon and crack an egg in each.
Cover and let the eggs cook for a few minutes until the egg whites are set.
Serve with pita bread or any other bread of choice.
