Egg Chatamari

Egg chatamari is a unique Nepali recipe featuring eggs, chopped vegetables and spices bound together by rice flour.

INGREDIENTS

  • ½ cup rice flour 
  • 2 eggs 
  • ½ cup finely chopped vegetables (onions, tomatoes, capsicums, green chillies) 
  • ¼ cup chopped coriander leaves 
  • Dry spices of choice (red chilli powder, chaat masala, cumin powder, coriander powder) 
  • Salt to taste  

METHOD 

  • In a bowl, add rice flour and water and make a thin batter. 
  • In another bowl, take 1 egg, the chopped vegetables and your dry spices of choice. Beat them all together; minced meat can also be added at this stage. 
  • Heat a non-stick pan and pour a ladleful of the rice flour batter. 
  • Over the batter, spread the egg-vegetable mix. 
  • Break 1 egg and pour it over this mix. 
  • Now put the lid on and let it cook for 5 to 6 minutes on a low flame. 
  • Sprinkle some coriander and dry spices and serve hot.
