Atta Gur Cake

You will love this healthy, soft and moist cake made without refined flour and sugar.

INGREDIENTS

 

  • 1½ cups whole wheat flour
  • 1 teaspoon baking powder
  • ½ teaspoon baking soda
  • 2 medium ripe bananas
  • ½ cup oil
  • 1 teaspoon vanilla extract
  • 1½ cups milk
  • ¾ cup gur (jaggery) powder

METHOD

  • Pre-heat the oven to 170°C. Grease the cake tin.
  • Pure the bananas with the help of a mixer or blender.
  • In a bowl, whisk the flour, baking powder and baking soda together and set it aside.
  • In another bowl, combine the oil, vanilla extract, gur powder and pureed bananas.
  • Add the dry ingredients to the wet ingredients and mix. Slowly add the milk and whisk with a spatula.
  • Pour the batter into the cake tin and bake for 20 to 23 minutes.
  • Insert a toothpick at the centre of the cake to check if it is done. If the cake is done, the toothpick will come out dry and clean.
  • Remove the cake from the oven and allow it to cool on a wire rack before serving.
