You will love this healthy, soft and moist cake made without refined flour and sugar.
INGREDIENTS
1½ cups whole wheat flour
1 teaspoon baking powder
½ teaspoon baking soda
2 medium ripe bananas
½ cup oil
1 teaspoon vanilla extract
1½ cups milk
¾ cup gur (jaggery) powder
METHOD
Pre-heat the oven to 170°C. Grease the cake tin.
Pure the bananas with the help of a mixer or blender.
In a bowl, whisk the flour, baking powder and baking soda together and set it aside.
In another bowl, combine the oil, vanilla extract, gur powder and pureed bananas.
Add the dry ingredients to the wet ingredients and mix. Slowly add the milk and whisk with a spatula.
Pour the batter into the cake tin and bake for 20 to 23 minutes.
Insert a toothpick at the centre of the cake to check if it is done. If the cake is done, the toothpick will come out dry and clean.
Remove the cake from the oven and allow it to cool on a wire rack before serving.
