This simple dessert made of sliced banana and silky tapioca is comfort in every spoonful.
INGREDIENTS
3 tablespoons tapioca pearls (sabudana)
1 ripe banana
2 tablespoons sugar
¾ cup water
¾ cup coconut milk
A pinch of salt
Crushed roasted groundnuts for garnish
METHOD
Soak the tapioca pearls in water for 3 to 4 hours.
Meanwhile cut the banana into discs, place them in a bowl, sprinkle the sugar on top, and leave them for 2 hours in the refrigerator.
Once the tapioca pearls are well soaked and softened, take a thick-bottomed pot, add ¾ cup water to it and let it boil.
Add the tapioca pearls and let them cook for 2 to 3 minutes until they turn translucent. Then add the prepared banana slices and a pinch of salt and mix together.
Add the coconut milk and let everything boil together till it comes together in a pudding-like consistency.
Serve warm with a sprinkle of crushed groundnuts for garnishing.
