Bread Butter Pudding

A magical treat for little tummies!

INGREDIENTS

  • 8 slices white bread
  • 3 tablespoons butter, at room temperature
  • 1 tablespoon marmalade or jam (optional)
  • Raisins and berries of choice (for the filling and topping)
  • 3 tablespoons brown sugar
  • 2 eggs
  • 2 cups warm milk
  • 1 teaspoon vanilla essence
  • Nutmeg or cinnamon powder

METHOD

  • Apply butter on each slice of bread and set aside. You can also add marmalade or jam, if using.
  • Cut the slices into triangles and arrange half of them in a greased baking pan with the buttered side facing up.
  • Spread some raisins and berries on top followed by a sprinkle of brown sugar.
  • Now place the rest of the bread triangles over it, buttered side up, and repeat step 3.
  • In a bowl, beat the eggs well, add warm milk and the rest of the sugar and whisk well. Then add the vanilla essence and mix.
  • Now, pour the milk mixture onto the bread.
  • Lightly press the bread so it soaks completely in the mixture and let it rest for 20 to 30 minutes.
  • Sprinkle some nutmeg or cinnamon powder on top.
  • Preheat the oven to 180˚C.
  • Place the baking pan in the pre-heated oven and let it bake for 30 to 40 minutes until the top of the pudding appears crispy and golden.
  • Let it cool for a few minutes and serve.
